Iceberg Mushrooms Overview
Iceberg is the white version of Thai Lipa Yai, a cubensis strain that comes from the island of Koh Samui in Thailand. Growers took the pigment-free fruits from that line and grew them out on their own, and Iceberg is the result.
The mushrooms are pale cream from cap to stem, with no dark colour anywhere. The caps are wide and open out almost flat, with a raised centre and a cracked, scaly top. The edges split and curl as they dry. Underneath, the gills are light, and the stems are short and thick.

Where does the name Iceberg come from?
The colour. Regular Thai Lipa Yai has golden-brown caps. This version has none of that pigment, so the whole mushroom comes out pale, and the name stuck.
How should I store dried mushrooms?
Keep them sealed, cool, dark and dry. A jar in a cupboard works well. Kept that way, dried mushrooms hold up for a long time. Heat, light and moisture are what wear them down.
